Orange Summer Carrot Cake

The Recipe

This Orange Summer Carrot Cake is the perfect addition to any summer party! With refreshing orange ginger frosting and fresh ingredient cake, your guests will be begging you for the recipe! I have a 3.5 quart tilt KITCHEN AIDE TILT MIXER in color ICE! I love it and the appliance has 10 speeds which is perfect for pretty much any recipe you are wanting to tackle! Additionally for this recipe I used my FRESH PREP SLICER/SHREDDER which is currently on sale! This tool is great and makes kitchen prep simpler, faster, and more fun!

Here are a few tips and tricks to ensure your cake turns out fabulous! Ensure to grease your pans with extra love! I always use coconut oil to grease any backing pans. Coconut oil is a great alternative to some of the other oils on the market and I find really helps to keep your cake moist. When making any white frosting adding a dab of purple food coloring ensures your frosting stays a bright white color. Finally, I use dried figs and dates to the cake batter, this adds a bit more flavor and keeps the cake more moist!

 

RECIPE:

  • 2 Cups ALL-PURPOSE FLOUR

  • 1 1/2 Cups SUGAR

  • 3 tbsp BAKING POWDER

  • 1 1/2 tbsp PUMPKIN SPICE

  • 1/2 tsp BAKING SODA

  • 4 EGGS

  • 2 3/4 cups SHREDDED CARROTS (can add more or less depending on how carrotty you prefer:) )

  • 3/4 cup COCONUT OIL

  • 1/2 cup HONEY (using a local honey helps with any allergies)

  • 1 cup DATES AND FIGS (I utilize dried and chop them into chunks)

  • 1/2 tsp SALT

Combine dry ingredients and then combine in all non-dry ingredient into mixer. Grease generously two 8 inch pans with coconut oil. Bake for 23 minutes or when a knife can cleanly poke into the cake pan. Let cakes cool completely prior to frosting!

Orange Frosting

  • 1 ORANGE (zest the entire medium orange and juice from the orange)

  • 1 tsp of GROUND GINGER

  • 1 package of CREAM CHEESE

  • 3/4 cup of BUTTER

  • 2 1/2 cup of POWDERED SUGAR

  • Optional: DASH OF PURPLE FOOD COLORING (helps to keep the frosting white)

Combine all mixture except powdered sugar and zest. Once combined slowly add powdered sugar and zest. For best results combine frosting ingredients in a mixer on high for 6 minutes. 

Garnish with ground pistachios, shredded carrots, and two dried figs! Enjoy!
